Fat fluctuation in the package (block) is possible +/- 5%; in the production batch +/- 2%. There must be no large tendons, visible blood residues, clots, bruises, bone chips and splinters, lymph nodes and contamination. Natural meat juices may be released into the package. Color - light or dark pink, there may be color changes, darkening in places of contact with the container or packaging.
